Masak Lemak Timun Bendang

The day I ate everything on my plate...heheheheh, Alhamdulillah.
 
Masak Lemak Timun Bendang & Udang

Ingredients
1 can 300ml coconut milk + 100ml Water
Sugar to taste
Salt to taste
1 teaspoon turmeric powder
1 turmeric leaves (optional)
1 teaspoon black pepper
2 small onions
Or
6 birds eye chillies (pounded) - optional if you like the sauce to be hot as Masak Lemak Cili Api

8-10 pieces medium prawns/anchovies
1 small Valley India cucumber (Timun Bendang)- cut to 1x2 inch size


Directions
In a pot, pour in the coconut milk. Pound onions and put into the coconut milk with the cucumber. Heat the pot with all the ingredients together using medium-low heat. Make sure to stir them gently regularly. At the time when, the sauce is about halfway to boil add in tumeric powder, black pepper, sugar, salt and turmeric leaves. When gravy comes to boil, add in the prawns/anchovies and cook for 4 minutes.

Buttermilk Pancake @ Martha Stewart

 My little hero loves this...mm, missed you dear...

Ingredients:

2 cups all-purpose flour 
2 teaspoons baking powder 
1 teaspoon baking soda 1/2 teaspoon salt 
3 tablespoons sugar 
2 large eggs, lightly beaten 
3 cups buttermilk 
4 tablespoons unsalted butter, melted
plus 1/2 teaspoon for griddle

Method:  
Heat griddle to 375 degrees. Whisk together flour, baking powder, baking soda, salt, and sugar in a medium bowl. Add eggs, buttermilk, and 4 tablespoons butter; whisk to combine. Batter should have small to medium lumps.

Heat oven to 175 degrees. Test griddle by sprinkling a few drops of water on it. If water bounces and spatters off griddle, it is hot enough. Using a pastry brush, brush remaining 1/2 teaspoon of butter or reserved bacon fat onto griddle. Wipe off excess.

Using a 4-ounce ladle, about 1/2 cup, pour pancake batter, in pools 2 inches away from one other. When pancakes have bubbles on top and are slightly dry around edges, about 2 1/2 minutes, flip over. Cook until golden on bottom, about 1 minute.

Repeat with remaining batter, keeping finished pancakes on a heatproof plate in oven. Serve warm.

Nasi Dagang Gulai Ikan Tongkol

Nasi dagang, yes, you can have it at anytime if you are in Terengganu or Kelantan. But having to have it here, is awesome. When the winter is about to leave, the weather is Masyaallah. 

Apart from the basic combination of rice and fish curry, Nasi Dagang usually comes with its different components which can be combined to suit the diner’s taste. From a simple serving of the steamed rice and mackerel curry usually found at roadside stalls, the complete home-made version may include a sliced hard-boiled egg, fried coconut, vegetable pickle and sambal.

Here is my version of nasi dagang with acar rampai, hard-boiled egg and sambal cili and last but not least, the Gulai Ikan Tongkol:). I know the image was snapped from my tab@instagram folders and blur bagai:P, but still I heart the eating part, heheheheh.


Nasi Dagang
Ingredients:
3 cups Nasi Dagang Rice or
1 cup glutinous rice mix with 3 cups Thai scented rice
(soak overnight or 6-7 hrs)
3-4 cups coconut milk 1 in. or thumb size ginger (slice thinly)
6 shallots (slice thinly)
1 tbs halba or fenugreek

1 tbs of sugar
1/2 tbs of salt

Method:

1) Wash and drain rice. Steam for 1 and a half to 2 hrs.
2) Place the rice in a bowl. Add the shallots,ginger, sugar, salt and fenugreek.
3) Stir in the coconut milk a bit at a time until the rice has absorbed the coconut milk.
4) Place in a steamer and steam again until rice is cooked.




Gulai Ikan Tongkol


Ingredients:
2 pcs. Tuna fish (Have it cleaned and washed.Boiled with 5 asam keping or 2 tbs. vinegar and salt)
6 cups of coconut milk
3 tbs of rempah gulai cap bunga.
salt to taste
1-2 tbs of brown sugar

 






Chilly paste:
20-30 pcs of dried chillies (boiled until soft)
1 inch or thumb size galaghal

1 inch ginger
6 shallots

1 cup cooking oil

Blend all ingredients until fine.

Method:

1) Heat oil and stir fry all the blended ingredients.
2) Add in the coconut milk and boil until the chilly and curry powder are cooked.Keep the fire at low.
3) Add in the fish and boil for few more minutes.
4) Salt and sugar to taste.
5) Lastly add the Thai fresh chillies. Ready to serve with the rice.

Lacy Milk Pancake, The Roti Jala

This was the product during winter...thank god, I blog this:p. I have made this previously, here:).




Roti Jala


Ingredients:


2 cups all purpose flour, sieved + pinch of baking powder
2 1/2 cups of fresh milk
2 tbsp oil
1/4 tsp salt
1 egg
yellow colour

Method:

Mix all ingredients well to form a smooth batter,(I blended in food mixer:)) and strain it through a fine sieve. Add more water if the batter is too thick. Grease the frying pan with oil, then add in some batter into the roti jala mold and sing a circular motion, let it drip to form a thin layer of pancake.

Assalamualaykumwbh all.

I know, it is me again who failed to find time to blog. Huhuhuhu....
I find it difficult to manage 3 blogs all up to date, with additional of twitter, instagram, 2 personal emails, office things, home and everything in between...ouch...you better tell me to stop..:P

Nevertheless....
A part of me still, everyday shouting at my ears to say hi. 
Hence, here goes,......
 
I am sharing some of the photos from last school break program for MUB-Meniti Usia Remaja. This program lead by Jemaah Wanita/Muslimat IKRAM cawangan Terengganu. So I was there to snap these from distance, 4 batuuu tew;). Tq to Miss Lense. Ya ya yaaaa, you were such a big help. I was the one who failed the flashes, the zooming part plus with the low-bat thing...kikikiki. 
Yup, I am still learning for event's images, which is not my type of interest in photos. But sometimes, it is good for others if we get involve right? And I don't do this to impress people. Because my photos are freakinglishly funny & stereotype. I think they can be forgiven, as a part of my new hobbies....did I said hobbies??? Gosh...so many hobbies? I should have master one out of many at least...hahahahaha....

Wise man says,
When people are IMPRESSED with you...they are actually IMPRESSED with the beauty of ALLAH SWT covering your sins and weaknesses. I said this, the same thing to my team. Hopefully this triggered something to them that, no one is perfect, but Allah does, the only ONE. So guys, take the challenge ya! You can develop them, just work for it, pray and leave the rest & everything else to Allah swt. He will take care us, the best!
